Alternative ''Panna Cotta''

Whats up guys, Giordano here,
        On this post we gonna talk about Panna Cotta. An Italian desert ( meaning cooked cream ), is made by blending thick cream, egg white and honey and then bake it on bain-marie or oven in low temperature.
        Today we gonna cook an alternative and more famous way that most restaurants cook in Italy and all over the world. Lets get started !!!

Panna Cotta

           Ingredients :

For the panna cotta :
  1. 1 litre  35% whipping cream
  2. 500 ml milk
  3. lemon zest from half lemon
  4. 1 vanilla stick 
  5. 150 gr sugar
  6. 4 gelatine leaves
  7. fresh mint leaves
For the sorbet :
  1. 200 gr of frozen forest fruits
  2. 100 gr sugar
  3. 50  gr water
  4. 10 gr lemon juice

           Method :

For the panna cotta :
  • Soak the gelatine leaves in a little cold water until soft.
  • Place the milk, cream, lemon zest, vanilla stick ( info ) and sugar to a small pot and bring it to simmer. Take pot off the heat. Discard the vanilla stick.
  • Squeeze the water out of the gelatine leaves, then add to the pot and stir until gelatine has dissolved.
  • Divide  the mixture among ramekins and leave to cool. Place into the fridge for at least 1-2 hours, until set.
For the sorbet :
  • In a small pot put the water, sugar and the lemon juice, bring it to simmer until it become sirup.
  • Drop the sirup into the frozen fruits.
  • Blend the fruits good and put them to the refrigerator till gets frozen.
  • At the end put panna cotta on a plate and scratch the sorbet with a fork on the top, garnish with a leaf of fresh mint. 
(if you dont want to make sorbet you can just put the sirup into the fruits, let it cool and garnish.)
